All of our coffee is special - but these limited editions are uniquely rare. We source some of the world’s finest beans, then craft a tailored roast to bring out their best. The end result is a unique and bespoke coffee, offered in hand-numbered batches of no more than 200.

About The Farm & Process :
Finca Huixoc was established in 1947 making it the first coffee farm in Huehuetenango! Sustainability is central to Huixoc’s farming practices. The farm produces organic fertiliser by composting discarded coffee cherry pulp with the help of worm composting, ensuring a nutrient-rich soil without relying on chemical fertilisers. Rather than using pesticides, ecological traps are employed to manage pests in an environmentally friendly manner.
During harvest season, they comb through the plantation several times to pick cherries at their peak maturation, ensuring the highest quality coffee. These cherries are washed and dried on patios to maintain consistency and cup profile. The unpredictable climate in Huehuetenango presents challenges for processing, but Huixoc has adapted over time to maintain a high standard of quality while minimising environmental impact.
